I had to laugh when reading the recipe and trying to decide on a drink for this Toast to Tuesday. There was a time in my son’s life when he was little where all he wanted for breakfast was a blueberry muffin. Every. Single. Day. He must have eaten hundreds of them. I thought that I would never get him to eat a normal breakfast…But just like everything else, it changes and you can look back and smile. It’s funny how something like that will hit you at the strangest time. It has been a long time since he was “addicted” to blueberry muffins but it was the first thing I thought of when I saw the drink…

This drink does not have many ingredients, most of them you probably already have. Anything you still need is an easy stop at the grocery store, or wine & spirits shop depending on where you live.

First up...you will need to make your blueberry simple syrup:

  • 1/4 c. granulated sugar

  • 1/4 c. water

  • 1/2 c. blueberries

  • Zest of 1/2 lime

  1. In a medium saucepan over medium heat, combine sugar and water and stir until sugar has dissolved. Add blueberries and lime zest and bring mixture to a boil. Reduce heat and simmer mixture until blueberries have burst, about 5 minutes.

  2. Remove from heat and let cool 10 minutes, then strain mixture into a clean jar. Let cool completely.

  3. On a small plate, stir together sugar and salt. Rim each glass with a lime wedge. Then dip in sugar salt mixture.

Helpful hints/tricks – want to try this delicious blueberry simple syrup but without the alcohol? I mean, maybe?? Hahaha you for sure can enjoy this without making it 21+. Use your left over blueberry simple syrup in seltzer water (you’re welcome) or as a sweetener for your iced tea. Plenty of ways to use any extra, OR you could just make another batch of margaritas!

Check out below how to make the full drink recipe:

  • 2 tbsp. granulated sugar

  • 2 tbsp. kosher salt

  • 1 lemon, cut into wedges

  • 2 oz. tequila

  • 1 oz. triple sec

  • 1/4 c. lemonade

  • Ice

  1. Add tequila, triple sec and lemonade to your glass and fill with ice.

  2. Top with blueberry simple syrup.

  3. Garnish with a lemon wedge and serve.

Definitely not a difficult drink to make, just takes a little pre planning. We made our blueberry simple syrup the night before we planned on making the margaritas which seemed to work out very well and gave it enough time to chill. As always we love to use our local farm stands for the fruit, but it was just a tad too early yet in the season. With so many farms in our backyards it is so easy to take a walk or hop in the car to grab whatever you need for that weeks’ meals, we are so spoiled. Plenty of places to pick your own fruit too which can make for a very nice day outside with the kiddos! However, we were able to find some very nice blueberries at the local grocery store so decided to go with those.

This refreshing margarita had us dreaming of a soft summer breeze lounging on the deck at sunset. It’s not too sweet or tart, honestly it’s just right – checks off all of the boxes. PLUS blueberries are just about a super food! They have been shown to protect against heart disease and cancer and can also help maintain bone strength, mental health and a healthy blood pressure! WIN-WIN!
